Abstract
Antioxidative activities of ethanol (75%) extracts from 35 edible or medicinal plants were examined in lard and palm oil by the Rancimat method. The extract of Dalbergia odorifera T.CHEN showed strong antioxidant activity. The chloroform layer of D. odorifera T.CHEN ethanol extract exhibited a strong antioxidant activity and showed a synergistic effect with the addition of ascorbic acid in lard and palm oil. In accelerated storage test in lard and palm oil at 60¡É, the chloroform layer (500 ppm) of D. odorifera T.CHEN extract showed similar antioxidant activity as BHT (200 ppm), but higher activity than BHA (200 ppm) and ¥ä-tocopherol (200 ppm). Addition of the D7-5-3 fraction from D. odorifera T.CHEN extract in lard, palm oil, and soybean oil increased the antioxidant activity of the mixtures by 770, 42, and 51%, respectively, compared with the control.
